Chop the Spring Onions.
Slice the Pancetta
Whisk the Eggs with the fork.
Fry the pancetta until the fat starts to melt.
Add the spring onions to the pan and fry them until soft.
Set the pancetta and onion aside.
Add the whisked eggs to the pan.
Fry the egg mix while stirring so that the eggs start to become creamy, but be careful not to fry too long because then the eggs will be scrambled.
When the omelette is almost ready, add the fried pancetta and spring onions.
Grate over the Parmesan cheese.
When the omelette is firm enough, angle the frying pan and roll the omelette towards one edge.
Form the omelet towards the edge so that it gets a nice shape.
Place the omelette on a plate but be careful and tilt the frying pan so that the omelette does not break.
